Pre-heat the oven to 150 C.
Line an oven tray with a sillicon mat. Borrow one from Femke ;-) or get it in a specialised cooking shop. It makes all the difference!
Combine dry ingredients in a large bowl.
Add wet ingredients and stir until smooth; it should be like liquid batter. If too runny, add a bit of cornstarch; if too stiff, add water.
Use a spoon to make cirles of ca. 10 cm. Smoothen them if necessary and make sure they are flat and do not have any holes.
Bake for ca. 15 minutes, until they are colored around the edges.
Now you need to work quickly: leave the tray in the hot oven, and remove one cookie at a time by gently sliding a flat-bladed knife/spatula under it.
Hold the cookie in your hand (it is hot so you might want to wear cotton gloves) and place the fortune on top before folding it in half. Then fold it again over a blunt-edged object - the edge of a soup bowl or something like that.
Allow to cool inside a glass or so to make sure it keeps its typical butterfly shape.
Store in airtight container; they go soggy quickly when left out in the open.
Practice to find the right baking duration; if not cooked long enough they will stay soft and if cooked too long they will firm up before you've folded them twice.
